The reason dual wielding is generally seen as great fro rogues is because in 5e, sneak attack happens when you hit (i.e., it is not a special attack action as it is in BG3), so if you miss with your main hand attack you can still possibly hit with the offhand and apply sneak attack to THAT hit..
